Vegan 8-Layer Dip

This dip is the perfect appetizer for a party or potluck. It’s super easy to make and is always a crowd-pleaser! Serve with homemade or store bought tortilla chips or pita chips.

Ingredients

  • 1 can refried beans fat-free
  • 2 cups sweet corn thaw, if frozen
  • 1 medium sweet potato or yam cooked, cooled, and mashed
  • 1 cup fresh salsa
  • 1 cup guacamole homemade or store bought
  • 2 cups shredded lettuce
  • 1 medium tomato diced
  • 1/2 cup black olives sliced
  • cilantro for garnish, optional

Instructions

  1. In an 8×8 inch glass baking dish (or something similar), spread the refried beans all across the bottom.

  2. Add the corn and cover the beans evenly, pressing the corn into the beans slightly with a spatula.

  3. Next spread the mashed yam over the corn.

  4. Spoon fresh salsa over the yams. 

  5. Next comes the guacamole. 

  6. Sprinkle with lettuce, tomatoes, and black olive slices.  Top with chopped cilantro, if desired. 

Recipe Notes

Optional – add sliced jalapeño on top with the olives for a spicier dip.
