In 2011, I adopted a plant-based diet and have become very passionate about this lifestyle. I want to help others learn about the benefits of eating this way and to inspire them to make healthier food choices.  While I eat a plant-based diet 99% of the time, I truly understand how becoming a plant-based (vegan) can be completely overwhelming to people.  My goal is to break it down and show you how you can eat more plants, even if you don’t plan to become a strictly plant-based eater.

My story
For most of my adult life, my weight yoyo-ed up and down.  I tried all sorts of fad diets trying to get my weight down.  I lost weight, but always gained it back and more.  It’s hard to say just how much weight I gained and lost over the years.  When I was in my early 30’s, I developed gallstones which I’ve discovered only recently can be caused from extreme dieting and weight loss.   A few years ago, my husband and I noticed our cholesterol numbers were starting to climb—eeek! So, I began looking into ways to lower the levels that did not include taking any medication (the first thing most doctors recommend). During my research I was seeing more and more information about adopting a plant-based/vegan diet. I read everything I could find and viewed several movies about this way of life.  Then, in the fall of 2011, after watching “Forks Over Knives” , we were completely convinced! We started eating a plant-based diet then and haven’t turned back. Since then I have become very impassioned about this lifestyle. Did our cholesterol numbers get better? You bet they did! We also lost weight while eating as much as we wanted.

Julie Hale is a freelance graphic designer who loves to travel, ride her bicycle, sing, read and spend time with her family.  She’s married to Jeff and they have three adult kids and 6 amazing grandkiddos.
