These plant-based Sloppy Joe sandwiches are quick, easy and tasty. Made with quinoa and beans instead of meat, they are a family favorite.

Ingredients

  • 1 cup quinoa
  • 2 cups veggie broth
  • 1/2 can refried beans fat-free, vegetarian
  • 1/2 cup ketchup
  • 2 tbsp mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce vegan, optional
  • 1 tbsp 100% pure maple syrup to taste

Instructions

  1. Cook quinoa in veggie broth as per instructions on package.

  2. Combine cooked quinoa, with refried beans and the remaining ingredients. 

  3. Pour mixture into a saucepan and cook on medium/low until heated through.

  4. Serving on whole wheat hamburger bun with lettuce or spinach and tomato. 

Recipe Notes

The recipe can also be made with mashed whole beans or lentils or a combination.
