Pumpkin Oatmeal For a Crowd!

Delicious oatmeal that reminds you of pumpkin pie! Perfect for those chilly fall or winter mornings. My grandkids love this for breakfast!

Ingredients

  • 3 cups Coaches Oats or steel cut oatmeal
  • 9 cups water
  • 1/2 can pumpkin puree 100% pumpkin, no other ingredients
  • 3 tbsp 100% pure maple syrup *see notes for another option
  • 2 tsp cinnamon
  • dash ground cloves
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp allspice
  • pecans raw, salt free

Instructions

  1. Combine all ingredients (except pecans) in a dutch oven. 

  2. Bring to a gentle boil and simmer about 10 minutes until thickened. 
  3. Sprinkle raw pecans on top and enjoy!

Recipe Notes

*Alternative to sweetening with maple syrup:
Combine 1 cup water and 4-6 pitted dates in blender and blend until completely smooth.  Add with other ingredients and cook per instructions. If you use this date/water blend to sweeten your oatmeal, you can decrease the water needed by one cup.

**If you are not cooking for a crowd, you can make this on Monday and enjoy it all week long!
