Pumpkin Muffin in a Cup

These tasty little pumpkin muffins are quick and easy to make and perfect for breakfast or with your afternoon coffee or tea.

Ingredients

  • 3 tbsp whole wheat flour
  • 1/4 tsp baking powder
  • dash cinnamon
  • dash allspice
  • dash salt
  • 2 tbsp pumpkin puree 100% pumpkin
  • 1 1/2 tbsp maple syrup 100% pure
  • 1 tbsp almond milk or any plant milk

Instructions

  1. Gather all the ingredients.

  2. Combine dry ingredients in a coffee mug.

  3. Stir in wet ingredients (pumpkin, maple syrup, and milk). Whisk with fork until the flour mixture is completely mixed in.

  4. Place in microwave and cook on high for 1 minute 30 seconds.

  5. Eat it right out of the cup or run a knife around the edge to move to a plate. Enjoy!
