Ingredients

  • 1 lb strawberries hulled and chopped
  • 1/2 fresh pineapple peeled, cored & chopped (substitute 1 can pineapple tidbits, drained)
  • 2-3 tomatoes chopped (Roma or your choice)
  • 1/4 cup sweet red onion diced
  • 1/2-1 jalapeño finely chopped (or your favorite chili pepper)
  • 2 tbsp lime juice fresh or bottled
  • 1/4 tsp salt optional

Instructions

  1. Place hulled and chopped strawberries in a large bowl.

  2. Add peeled, cored and diced pineapple to the bowl with the strawberries.

  3. Toss in chopped tomatoes and onion.

  4. Add the jalapeño.  You can use more or less depending on how spicy you like your salsa.  Stir all to combine.

  5. Mix in lime juice and optional salt. Stir until well combined.

  6. Sprinkle with chopped cilantro and serve.

Recipe Notes

The flavors will blend better if you let the salsa sit in refrigerator for and hour or two before serving.
