Irish Soda Bread

Inspired by an international recipe, this plant-based version of Irish Soda Bread is a great addition to your St. Patrick’s Day dinner.

Ingredients

  • 3 tbsp Earth Balance buttery spread or other plant-based spreads
  • 2 1/2 cups whole wheat pastry flour
  • 2 tbsp sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup raisins
  • 3/4 cup buttermilk *see recipe notes for plant-based option

Instructions

  1. Preheat oven to 375 degrees F. 

  2. Combine dry ingredients and using a pastry blender, cut-in the buttery spread until the mixture resembles fine crumbs. 

  3. Stir in raisins and gradually add buttermilk a little at a time until a soft dough is formed.

  4. Place dough on a floured surface and knead for 1-2 minutes until smooth.  

  5. Shape into a round loaf shape and place on parchment paper or silicone covered baking sheet. 
  6. Cut and X in the middle of the loaf being careful not to cut it too deep.  

    Bake for 35-45 minutes until golden brown. 

Recipe Notes

Plant-based Buttermilk Recipe

Combine 1 tsp. vinegar with 3/4 cup plant-based milk (almond, soy, oat, etc). and let the mixture sit for at least 5 minutes until the milk curdles.
