Indian Stew

This is a delicious Indian stew with potatoes, garbanzo beans, onions, tomatoes and Indian spices . You can eat it alone or over a bed of brown rice for a hearty meal.  Cooked in an electric pressure cooker, this meal is on the table in about 30 minutes.

Ingredients

  • 1 1/2 cups garbanzo beans or use one can, drained & rinsed
  • 1 can diced tomatoes no salt, undrained
  • 1 can water use empty tomato can
  • 2-4 potatoes cut in big chunks
  • 1/2 cup onion diced
  • 1 clove garlic minced
  • 2 tsp Garam Masala spice adjust for spice level
  • 1 tsp turmeric powder
  • 1 tsp fenugreek optional, but suggested
  • 1-2 tsp bragg aminos or salt, to taste

Instructions

  1. You can find Indian spices in Asian grocery stores. 

  2. Place all ingredients into the electric pressure cooker.

  3. Stir well to combine.

  4. Close and seal the lid. 

    Set pressure to high = 15.0 psi (pounds per square inch).

    Set pressure cooking time to 7 minutes.

  5. It takes approximately 10 minutes for the pressure cooker to heat up before the pressure cooking begins.  

    Once it's finished cooking, you can let it release steam naturally (10-20 minutes or more) or do a quick release (follow manufacturers instructions to do this safely).

This stew could also be cooked in a saucepan on the stove.
