Garlic and Herb Kale Rice

This Garlic and Herb Kale Rice recipe is really simple and is delicious! YUM!

Ingredients

  • 1 bunch kale rinsed and chopped
  • 1 tbsp veggie stock *original recipe called for oil
  • garlic
  • herbs your choice
  • salt to taste
  • 1 cup rice
  • 2 cups water

Instructions

  1. Rinse and chop a bunch of kale and set aside. (*Optional - toss in oil and sprinkle with salt)

  2. Saute (in veggie stock) garlic, herbs of your choice and salt. 
  3. Add rice and water (2 parts water to every 1 part rice) to garlic/herb mixture and bring to a boil. Turn temperature to low and simmer.  

  4. When rice is almost done add kale and finish steaming.  Stir in optional vegan butter (omit for fat-free version).

Recipe Notes

REALLY simple recipe!  Sometimes I even add crushed peanuts on top. Serve with a side of avocado, purple onion and tomato salad and carrots.

*Note - I normally don't cook with oil or butter but add it every once in a while.  ~Rena M.
