Ingredients

  • 1/2 cup chopped onion time saver: use frozen
  • 2 cloves garlic minced
  • 1 1/2 cups lentils of your choice pre-cooked
  • 1 1/2 cups garbanzo beans pre-cooked or use 1 can, no-salt, drained and rinsed
  • 1 15 oz. can chopped tomatoes with juice
  • 1 cup veggie broth
  • 2 tsp garam masala spice
  • 1 tsp turmeric
  • 1 cup spinach chopped

Instructions

  1. Combine all ingredients in a medium saucepan. Bring to boil.

  2. Reduce heat and simmer for 30 minutes.

  3. Serve over rice or couscous.
