Cheezy Mushroom Onion Sauce

This rich, cheesy sauce with garbanzo beans takes only a few minutes to cook using items you have on hand. Delicious served over potatoes, rice, grains or pasta.

Ingredients

  • 1 can garbanzo beans (salt-free) undrained
  • 8 ounces pre-sliced mushrooms
  • 1/2 cup frozen chopped onions
  • 3/4 cup nutritional yeast "nooch"
  • 1 cup cold water
  • 2 tsp cornstarch
  • 1/4 cup water
  • 1/2 tsp black pepper

Instructions

  1. Combine first five ingredients (do not drain the garbanzo beans) and bring to a slow boil. Simmer 10 minutes or so, until mushrooms and onions are cooked. 

    Optional - mash the beans slightly as they cook. 

  2. Stir 1/4 cup of cold water into 2 tsp cornstarch until it's lump-free. Slowly whisk mixture into hot mushroom/onion sauce, stirring constantly until smooth and thickened. Sprinkle with black pepper to taste.

  3. Serve over steamed spinach and potatoes, rice or pasta.
