This rich, cheesy sauce with garbanzo beans takes only a few minutes to cook using items you have on hand. Delicious served over potatoes, rice, grains or pasta.
Combine first five ingredients (do not drain the garbanzo beans) and bring to a slow boil. Simmer 10 minutes or so, until mushrooms and onions are cooked.
Optional - mash the beans slightly as they cook.
Stir 1/4 cup of cold water into 2 tsp cornstarch until it's lump-free. Slowly whisk mixture into hot mushroom/onion sauce, stirring constantly until smooth and thickened. Sprinkle with black pepper to taste.
Serve over steamed spinach and potatoes, rice or pasta.
