Cheezy Hash Brown & Spinach Bake​

This hearty, savory potato dish is great for breakfast, brunch or dinner. My non-plant-based family and friends think this is yummy too!

Ingredients

Potato Mixture

  • 1 onion (large) chopped
  • 4 cloves garlic diced
  • 2-3 handfuls fresh spinach or other greens chopped (optional - 8 oz. frozen)
  • 32 ounces southern-style hash brown potatoes (frozen) thawed

Cheezy Sauce

  • 1 1/4 cups non-dairy milk plain (almond, soy, oat, etc.)
  • 1 cup water
  • 1 1/2 tbsp lemon juice
  • 3/4 cup nutritional yeast
  • 2 tbsp tahini (omit for fat-free)
  • 3 tbsp cornstarch
  • 1 tsp salt omit for low-sodium diets
  • 1 tsp dry mustard
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/8 tsp cayenne pepper optional
  • additional salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees. Lightly oil 9x13 inch dish. 

  2. Place all Cheezy Sauce ingredients in a blender and blend until very smooth. 

  3. Heat large, non-stick frying pan. Add onions and garlic with 2 tbsp water or broth for browning.  

  4. Add chopped spinach to frying pan with 1-2 tbsp water, cover and simmer (stirring occasionally) until spinach has wilted.

  5. Give the cheezy sauce one more whirl in the blender. 

  6. Put the thawed potatoes and the sauce into the frying pan. Turn burner to medium. Stir constantly until sauce is thickened.

  7. Pour mixture into prepared 9x13 inch dish.  Cover with foil and bake for 30 minutes. Remove foil and continue to bake for an additional 10-15 minutes until browned and heated through.
