Blueberry Ice Cream

This super simple, dairy-free ice cream is really delicious and good for you too! Made from bananas and frozen blueberries or any berries you have on hand.

Ingredients

  • 2 large frozen bananas *see notes
  • 1 cup frozen blueberries or any berries
  • 1 tsp vanilla
  • 3 cups almond milk or other plant milk
  • 1 tbsp agave or maple syrup optional, to taste

Instructions

  1. Cut bananas into chunks and place them in the blender jar.  Pulse to break them up a bit.  *(see notes about using unfrozen bananas)

  2. Add remaining ingredients and give the blend a good whirl, stopping occasionally to scrape the ice cream back into the blades. If you have a vitamix, you can just use the tamper and don’t have to stop the blender. 

  3. Eat right away for soft serve or spoon into a container and place in your freezer for 30+ minutes for harder ice cream.  Yum Yum!

Recipe Notes

Helpful hints from reader Kathleen !  

If your blender won’t handle the frozen bananas, you can use fresh with the frozen berries.  You can also soften a frozen banana just a few seconds in the microwave to make for easier blending. 

For extra creamy ice cream, add a bit of avocado.
