Garbanzo Salad Sandwich

Sandwiches are always an easy, quick lunch. This Garbanzo Salad is tasty and uses garbanzo beans in place of tuna.

Ingredients

  • 1 can garbanzo beans (chickpeas), no salt drain and rinse
  • 1 stalk celery diced
  • 1-2 tbsp sweet or dill pickle relish
  • 1-2 tbsp Dijon mustard
  • 1/2 cucumber sliced
  • sliced red onion optional
  • several leaves spinach or lettuce
  • 2 slices (per person) whole wheat bread or rolls

Instructions

  1. Drain and rinse the garbanzo beans and place into a dish or bowl.

  2. Using a potato masher, mash the beans.  You can mash them all or leave some whole.

  3. Add the celery, pickle relish and mustard and combine.  

  4. Spread each slice of bread (or roll) with the garbanzo salad and add red onion, cucumber and leaves of spinach or lettuce. ENJOY!
