Sunday Morning Tofu Scramble

A simple, but delicious and satisfying tofu scramble filled with fresh veggies and topped with salsa. Serve with hash browns, toast, and fresh fruit.

Ingredients

  • 1/2 cup chopped onion fresh or frozen
  • 1/2 cup chopped bell peppers fresh or frozen
  • 1-2 cloves garlic chopped
  • 6-8 mushrooms sliced
  • handful spinach fresh or frozen
  • 1 container extra firm tofu drained
  • 1 tsp turmeric
  • 1-2 tbsp low-sodium soy sauce or Bragg's Aminos
  • fresh salsa

Instructions

  1. Drain and press tofu between paper towels to remove excess liquid. Set aside.

  2. Brown onions, bell peppers, mushrooms and garlic in water or veggie broth in a non-stick frying pan.

  3. Add block of tofu (drained and pressed to remove extra liquid), turmeric and soy sauce.  Break tofu apart as you mix all the ingredients.  

  4. Turn burner to low, add spinach and cover.  Cook until spinach is wilted and warm.

  5. Serve with fresh salsa along with hash browns and toast or muffins, and some fresh fruit.
