Plant-Based Spaghetti and Meatless Sauce

Nothing tastes better on a cold day than a big plateful of homemade spaghetti. This from scratch sauce is plant-based and fat-free. For a heartier sauce, you can add vegan "meat" (pictured). See recipe notes for other add-in options.

Ingredients

Sauce

  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 large bell pepper chopped
  • 8 oz. mushrooms sliced or diced
  • 2 cups chopped broccoli
  • 1 28 oz can crushed tomatoes with basil
  • 1 15 oz can chopped tomatoes salt-free
  • 2 tbsp capers or chopped Kalamata olives optional
  • 2 tbsp tomato paste
  • 1 15 oz can tomato sauce
  • 2 tsp soy sauce or Bragg Aminos
  • 2 tbsp Italian seasoning basil, oregano, thyme
  • 1 tbsp parsley
  • 1/2 tsp ground cloves
  • 1 large bay leaf
  • crushed red pepper optional, to taste
  • salt and pepper to taste
  • 1/4 cup panko bread crumbs for thickening
  • 1 lb whole wheat spaghetti noodles
  • plant-based "meat" see notes below for various options

Instructions

  1. Brown onion, garlic and bell pepper in vegetable broth or white wine.

  2. Add all remaining ingredients except the spaghetti noodles. Stir well and bring to a slow boil. Turn down heat and simmer for at least one hour, stirring occasionally. 

  3. About 20 minutes before serving, boil a pot full of water and cook the spaghetti noodles according to the package instructions. If you are adding vegan "meat" to your sauce, this is the time to add it so it can heat through.  

  4. Drain and rinse noodles. Spoon the sauce over the noodles and serve with a big green salad and thick slab of bread.

Recipe Notes

  • Plant-Based "Meat" Crumbles (recipe)
  • Chop and crumble tempeh into your sauce and let it simmer for 30-60 minutes.
  • Add 1-2 cups pre-cooked lentils to your sauce and simmer 60 minutes.
  • Cut portobello mushrooms, into 1 inch cubes and simmer in sauce for 60 minutes. 

Additional Notes:

If the sauce tastes too tomatoey, you can add a tsp. of sugar to cut down the acidity.

As weird as it sounds, adding a small amount of Panko bread crumbs to the sauce will help to thicken it.
