Roasted Pumpkin Seeds
Pumpkin seeds, sometimes called Pepitas, are tasty little treats which are chock-full of nutrients and antioxidants. This oil-free recipe can also be used to roast seeds from other winter squashes.
Ingredients
- fresh pumpkin seeds cleaned
- salt or other spices optional, but tasty
Instructions

Scoop pumpkins seeds from the pumpkin. Rinse with water in a colander, picking-off any stringy pieces of pumpkin. Preheat oven to 350 degrees F.

Place seeds in large pot and cover with water. Add salt and bring water to a boil and cook for 10 minutes. Drain.

Layer seeds on a cookie sheet covered with either parchment paper or a silicon baking sheet.

Bake at 350 degrees for 15 minutes, then stir and continue to roast for another 15 minutes. Stir again and roast another 10-15 minutes or until they are crispy. You will know they are done when you can eat the seed, shell and all.

Sprinkle with salt or other spices before you place seeds in the oven.
