Roasted Pumpkin Seeds

Pumpkin seeds, sometimes called Pepitas, are tasty little treats which are chock-full of nutrients and antioxidants. This oil-free recipe can also be used to roast seeds from other winter squashes.

Ingredients

  • fresh pumpkin seeds cleaned
  • salt or other spices optional, but tasty

Instructions

  1. Scoop pumpkins seeds from the pumpkin. Rinse with water in a colander, picking-off any stringy pieces of pumpkin.   Preheat oven to 350 degrees F.

  2. Place seeds in large pot and cover with water. Add salt and bring water to a boil and cook for 10 minutes.  Drain.

  3. Layer seeds on a cookie sheet covered with either parchment paper or a silicon baking sheet.  

  4. Bake at 350 degrees for 15 minutes, then stir and continue to roast for another 15 minutes. Stir again and roast another 10-15 minutes or until they are crispy. You will know they are done when you can eat the seed, shell and all. 

Recipe Notes

Optional -
Sprinkle with salt or other spices before you place seeds in the oven.
