Rice Pudding Oatmeal

A slightly sweet oatmeal with rice and raisins that reminds me of rice pudding.  Delish!

Ingredients

  • 3/4 cup coaches oats substitute other steel cut oats (see notes)
  • 3/4 cup instant brown rice (see notes)
  • 3 cups water
  • 1 tsp vanilla
  • 1 tbsp 100% pure maple syrup
  • 1/2 cup raisins
  • almond milk optional

Instructions

  1. Combine oats and rice in saucepan.  

  2. Add water, vanilla, maple syrup and raisins.

  3. Bring to boil. Stir and simmer covered on low for 5 minutes.  

  4. Remove from burner and let sit for 5 additional minutes.

  5. Stir well and pour in almond milk (optional) to add to the creaminess.    

  6. Serve and enjoy!

Recipe Notes

  • Please note: If you use regular steel cut oats, you will have to increase the cooking time.  They take longer to cook!
  • You can easily use leftover rice in place of the instant rice.
