Rice Pudding Oatmeal
A slightly sweet oatmeal with rice and raisins that reminds me of rice pudding. Delish!

Ingredients
- 3/4 cup coaches oats substitute other steel cut oats (see notes)
- 3/4 cup instant brown rice (see notes)
- 3 cups water
- 1 tsp vanilla
- 1 tbsp 100% pure maple syrup
- 1/2 cup raisins
- almond milk optional
Instructions

Combine oats and rice in saucepan.

Add water, vanilla, maple syrup and raisins.

Bring to boil. Stir and simmer covered on low for 5 minutes.

Remove from burner and let sit for 5 additional minutes.

Stir well and pour in almond milk (optional) to add to the creaminess.

Serve and enjoy!
Recipe Notes
- Please note: If you use regular steel cut oats, you will have to increase the cooking time. They take longer to cook!
- You can easily use leftover rice in place of the instant rice.
