Potato Cauliflower Curry
This plant-based curry is wonderfully fragrant and oh, so delicious and satisfying!

Ingredients
- 4 large russet potatoes peel, if desired
- 4 cups cauliflower florets
- 4 large carrots sliced into chunks
- 2-3 tsp curry powder
- 1 tsp fenugreek powder
- 4 cups vegetable broth
Instructions

Peel and cube potatoes and place in electric pressure cooker pot.

Add remaining ingredients, stir well.

Seal pan with lid and set pressure to 15 psi.
Set timer for 6 minutes.

Let pressure release naturally or do a fast release following manufacturers instructions.

With potato masher, mash some of the potatoes and cauliflower to thicken the gravy.
