Pineapple Cranberry Spinach Smoothie

Not only is this plant-based green smoothie delicious - it is full of vitamins, minerals and antioxidants!

Ingredients

  • 1 cup fresh cranberries
  • 1 medium cucumber
  • 1/4 cup fresh parsley
  • lots fresh spinach as much as you can fit in the blender
  • 1 can pineapple 100% juice, no sugar added
  • 2 tbsp chia seeds
  • 1 banana frozen

Instructions

  1. Put cranberries, cucumber, parsley and spinach in the blender.

  2. Pour the can of pineapple, with juice on top of the spinach. Blend slowly at first increasing the speed while blades chop the cranberries.

  3. Using the tamper, push the spinach and other ingredients down into the blades. Once fully blended, turn the blender off.

  4. Add about a 1/2 cup of water, 1 frozen banana and the chia seeds.  Blend another 15 seconds. 

  5. Voilà!  You have a delicious, nutritious green smoothie!

Recipe Notes

While it's better to chew your fruits and veggies as whole fruit, sometimes blending them into a tasty, quick smoothie is just what you want.   There is a whole lot of good stuff in these smoothies!
