Peach Salsa
This fresh peach salsa with tomato, black beans, corn, cilantro, and optional minced jalapeno is perfect as an appetizer or a salad. It is fat-free, plant-based and is also great for potluck dinners!

Ingredients
- 1 large tomato chopped
- 2 ripe peaches chopped
- 1 cup corn if frozen, thaw first
- 1 15 oz can salt-free black beans drained and rinsed
- 1/4 cup red onion diced
- 1 tbsp jalapeno seeds removed, minced (optional)
- 1/4 cup lime juice
Instructions

Prepare all the fruit and veggies and place in a large bowl.

Pour lime juice over and toss gently. Don't stir too much or the peaches will get mushy.

Serve with sliced vegetables or tortilla chips. Or just eat with a spoon! 😋
