Peach Muffins

These plant-based muffins are low in sugar and fat-free. Made with fresh peaches, they are delicious for breakfast or with a cup of coffee in the afternoon.

Ingredients

  • 1 1/2 cups flour of your choice
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup turbinado sugar
  • 1/2 tsp salt
  • 1/3 cup applesauce 100% fruit
  • 1/3 cup almond milk or other plant-based milk
  • 1 large fresh peach diced

Instructions

  1. Preheat oven to 350° F.

  2. Wash and dice the peach. You can opt to remove the skin or not. I leave it on.

  3. Combine dry ingredients: flour, baking powder, cinnamon, sugar, and salt. Stir and make a well in the middle.

  4. Fold in applesauce, plant milk, and diced peaches and mix until all dry ingredients are stirred in.

  5. Spoon mixture into silicone muffin cups.

  6. Bake 20-25 minutes until a toothpick inserted into the middle comes out clean. Serve warm or cool. Refrigerate leftovers (if you have any).
