Peach Cucumber Salad

Fresh peaches and cucumber with dill make this the perfect salad for hot summer evenings.

Serve with bread and some cold gazpacho for an easy supper without turning on the stove!

Ingredients

  • 1 English cucumber sliced
  • 2 large peaches sliced
  • 1 tbsp lemon juice
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup 100% pure
  • 1/2 cup fresh dill snipped
  • 1/4 cup raw pumpkin seeds
  • 4 large handfuls of lettuce greens optional

Instructions

  1. Slice cucumber and peaches.

  2. Combine lemon juice, maple syrup, and balsamic vinegar. Whisk until well mixed.

  3. Snip fresh dill over the top and pour the dressing over the salad. Toss until well coated.

  4. Serve right away or cover and refrigerate to let the peaches and cucumbers marinate in the dressing.

  5. Sprinkle with the pumpkin seeds before serving.

    Makes two big servings.
