Pasta Salad

This pasta salad is so easy to put together and tastes great. Delicious cold or at room temperature, it's the perfect lunch to take to work or school. Plus, you can easily switch out the ingredients and make a whole new and different salad each time! (see recipe notes for some ideas)

Ingredients

  • 1 lb pasta of your choice (wheat, gluten-free, veg) penne or spiral work well
  • 1 cup cherry tomatoes sliced in half
  • 1 medium cucumber quartered and sliced
  • 1 can black olives drained and sliced
  • 1 cup edamame shelled
  • 1/2 red onion minced. optional
  • 1 tbsp fresh dill chopped
  • 1/2 cup oil-free Italian salad dressing

Instructions

  1. Cook pasta per instructions on package. (Can be prepared the night ahead)

  2. While pasta is boiling, prepare tomatoes, cucumber and olives and place in large bowl.

  3. Drain pasta and rinse with cold water. Add to large bowl and stir to combine.

  4. Pour in salad dressing and mix well.  

  5. Sprinkle with fresh dill before eating.

RECIPE NOTES

Options:

Legumes - garbanzos, lentils, edamame, peas, black beans

Veggies - corn, broccoli, cauliflower, asparagus, carrots, celery

Fruit - you can also add fruit! - orange slices, apples, fresh summer fruit


Salad can be eaten right away or refrigerated for several hours.  If you refrigerate it, you may want to add more salad dressing as the dressing will have been absorbed into the pasta.
