Oven-Roasted Rosemary Potatoes

Coated with spices and roasted in the oven, these fat-free roasted potatoes are a tasty addition to any meal.

Ingredients

  • 6 large potatoes variety of your choice
  • 2-3 tbsp aquafaba (bean liquid) or water
  • 2 tbsp flour
  • 1 tsp paprika
  • 2 tsp garlic powder or more if you love garlic!
  • 1 tsp onion powder
  • 1 tbsp dried rosemary
  • 1 tsp salt to taste

Instructions

  1. Scrub potatoes and cut into wedges.  Place wedges in large saucepan or dutch oven and cover with cold water. 

  2. Bring potatoes and water to boil and cook for about 10 minutes until potatoes are starting to soften slightly.

  3. While potatoes are boiling, combine flour, paprika, garlic & onion powders, rosemary and salt in a small bowl. 

  4. Preheat oven to 400 degrees F. 

  5. Drain potatoes and add back to pan. Pour over aquafaba and stir gently to coat.  Sprinkle with dry spice mixture and toss to coat wedges.  

  6. On a parchment or silicone covered baking sheet, place coated potatoes.  Bake for 20 minutes. Stir and bake an additional 20 minutes until tender inside and crispy outside.

For smaller serving sizes, this recipe can also be prepared in an air-fryer.
