LuLu’s Hash

A delicious plant-based hash made with potatoes, sweet potatoes, Brussels sprouts, bell pepper, onion, and lots of savory herbs & spices.

Ingredients

  • 1 large onion
  • 1 large yam or sweet potato
  • 4-5 red potatoes
  • 1/2 lb Brussels sprouts halved
  • 1 red bell pepper or color of your choice
  • cumin
  • cayenne
  • garlic powder
  • Italian seasoning
  • paprika
  • rosemary

Instructions

  1. Preheat oven to 400 degrees F.

  2. Chop onion, potatoes, yams and bell pepper into big chunks.  Place all veggies in a large bowl.

  3. Remove outer leaves from Brussels sprouts and chop in half. Add to bowl. 

  4. Sprinkle garlic powder, cumin, paprika, Italian seasoning, rosemary over the vegetables. Mix well. Stir and sprinkle more spices.  

  5. Pour into baking dish.

    No need for any oil!! 

  6. Bake for 30 minutes. 

    Stir and continue to bake an additional 20-30 minutes until the potatoes and yams are fully cooked, but not mushy. 

Recipe Notes

You can use any variety of potatoes, yams, sweet potatoes or peppers.  

Optional: pare potatoes and yams or leave skins on
