Linda’s Moroccan Dinner

Nice and spicy with a little sweetness from the currants.

Ingredients

  • onion
  • garlic
  • red pepper
  • zucchini
  • broccoli
  • cauliflower
  • kale
  • carrots
  • mushrooms
  • green beans
  • currants
  • sliced almonds

Moroccan Spice Blend:

  • 1 tsp cumin
  • 1 tsp ginger
  • 3/4 tsp black pepper
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander
  • 1/2 tsp cayenne less if you don’t want it hot
  • 1/2 tsp allspice
  • 1/4 tsp cloves
  • salt

Instructions

  1. Dice and chop all the vegetables. 

  2. Saute’ the garlic, onions, and red pepper. Then add the rest of the vegetables, a little water, and sprinkle the spice in. Stir a lot. 
  3. Serve over quinoa.
