Linda’s Moroccan Dinner
Nice and spicy with a little sweetness from the currants.

Ingredients
- onion
- garlic
- red pepper
- zucchini
- broccoli
- cauliflower
- kale
- carrots
- mushrooms
- green beans
- currants
- sliced almonds
Moroccan Spice Blend:
- 1 tsp cumin
- 1 tsp ginger
- 3/4 tsp black pepper
- 1/2 tsp cinnamon
- 1/2 tsp coriander
- 1/2 tsp cayenne less if you don’t want it hot
- 1/2 tsp allspice
- 1/4 tsp cloves
- salt
Instructions

Dice and chop all the vegetables.

Saute’ the garlic, onions, and red pepper. Then add the rest of the vegetables, a little water, and sprinkle the spice in. Stir a lot.

Serve over quinoa.
