Jackfruit Chili Verde
This plant-based green chili is made with jackfruit instead of pork and is oh, so tasty! Delicious in a bowl by itself or served on top of burritos. YUM!
Ingredients
- 1 large onion chopped
- 4 cloves garlic minced
- 2 (20-oz.) cans jackfruit, young/green drained and rinsed
- 1 (8-oz.) can green chilies spice level of your choice
- 1/2 (4-oz.) can jalepenos
- 8 cups vegetable broth
- 2 large tomatoes chopped
- 1/4 cup cornstarch
- 1/2 cup water
- salt and pepper to taste
Instructions

Saute’ onion and garlic in large soup pot until soft.

Add green chilies and jalapenos and fry for a few minutes.

Roughly chop the jackfruit into smaller pieces. Place in plastic bag with 2 tbsp. flour. Shake bag to coat jackfruit. Remove from bag (discard extra flour) and add to onion, garlic, and peppers in skillet.

Brown jackfruit for about 10 minutes. Keep an eye on it so it doesn’t burn.

Add broth and tomatoes. Bring mixture to a boil and simmer on low for at least one hour. Stir occasionally.

Combine 1/4 cup cornstarch with 1/2 cup water. Whisk mixture into green chili and stir until thickened.
Recipe Notes
Fresh chilies and jalapenos can also be used. Roast and remove seeds and skin prior to adding to chili.
Serving suggestions:
- Ladle into a bowl and sprinkle with chopped cilantro and avocado.
- Pour over a rice and bean burrito for filling meal.
