Gianna’s Corn Salad

My 10-year old granddaughter created this delicious plant-based recipe so I could enjoy corn salad at one of our family picnics. A really simple and very tasty recipe you can eat as a side or main dish.

Ingredients

  • 2 cans corn salt free
  • 4 tbsp hummus
  • 1 tsp stone ground mustard
  • cilantro to your taste

Instructions

  1. Drain and rinse corn and place into a mixing bowl.

  2. Stir in hummus and mustard and mix well.

  3. Chop the cilantro (as much as you'd like) and add to the corn mixture. Stir well.

  4. Serve right away or cover and refrigerate until dinner time! ENJOY!
