Frankenstein Hummus

The added fresh spinach to a basic hummus recipe will turn it green for a cute Halloween appetizer kids will enjoy.

Ingredients

  • 1-15 ounce can garbanzo beans 1 1/2 cups cooked drained and rinsed
  • 2-3 cloves garlic minced
  • 2-3 tbsp tahini
  • 2 tbsp lemon juice
  • 2-3 tsp low-sodium soy sauce
  • 1 tsp cumin
  • 1/4 tsp cayenne powder optional
  • 1 cup fresh spinach or more!
  • Water if needed for blending

Instructions

  1. Combine all in a blender or food processor and blend until smooth.  Adding small amounts of water to help the blending process, only if necessary.  Don't let the hummus get too thin. 

  2. Makes 1 1/2 cups of hummus. You can refrigerate it for about a week or freeze it for longer.
  3. Spoon the green hummus into the middle of a platter and using a spatula, shape it into Frankenstein's head. Add carrots, black olives and a half Brussels sprout for the facial details.  Serve with crackers.
