Frankenstein Hummus
The added fresh spinach to a basic hummus recipe will turn it green for a cute Halloween appetizer kids will enjoy.
Prep Time 5 minutes
Ingredients
- 1-15 ounce can garbanzo beans 1 1/2 cups cooked drained and rinsed
- 2-3 cloves garlic minced
- 2-3 tbsp tahini
- 2 tbsp lemon juice
- 2-3 tsp low-sodium soy sauce
- 1 tsp cumin
- 1/4 tsp cayenne powder optional
- 1 cup fresh spinach or more!
- Water if needed for blending

Combine all in a blender or food processor and blend until smooth. Adding small amounts of water to help the blending process, only if necessary. Don't let the hummus get too thin.

Makes 1 1/2 cups of hummus. You can refrigerate it for about a week or freeze it for longer.

Spoon the green hummus into the middle of a platter and using a spatula, shape it into Frankenstein's head. Add carrots, black olives and a half Brussels sprout for the facial details. Serve with crackers.
