Ingredients

  • 1 clove garlic minced
  • 1/2 cup onion chopped
  • 1 small poblano pepper remove seeds and slice thinly
  • 1 14.5 oz. can diced tomatoes with juice
  • 1 10 oz. can green enchilada sauce
  • 1 15 oz. can black beans drained and rinsed
  • 1 15.25 oz. can corn (no salt) drained
  • 1 cup Ancient Grains or other quick cooking grain*
  • 1 cup vegetable broth
  • 2-3 tbsp. hummus
  • 1/4 cup cilantro chopped, optional

Instructions

  1. Brown garlic, onion, and poblano in large skillet. Add water or broth as necessary.

  2. Stir in tomatoes, enchilada sauce, beans, and corn.

  3. Add grains and veggie broth. Stir and bring mixture to a boil. Cover and simmer 15 minutes, stirring occasionally.

  4. Stir in hummus and combine well. Remove from heat, cover and let sit 10 minutes.

  5. Sprinkle with cilantro if desired. Serve with a green vegetable.

Recipe Notes

*You can substitute precooked rice or farro for the quick cooking grain.
