Chocolate Chia Pudding

This plant-based chocolate pudding is yummy stuff! The added chia seeds are not only what makes the pudding set, they are very good for you too!

Ingredients

  • 3/4 cup chia seeds *see notes
  • 3 cups almond milk or other plant milk
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder
  • 1/3 cup 100% pure maple syrup

Instructions

  1. Combine the chia seed with the cocoa powder in a mixing bowl and stir. Make sure there aren’t any little clumps of chia seeds.

  2. Add remaining ingredients and using a whisk, blend until smooth. 

  3. Refrigerate until pudding sets (minimum 1 hour).  

Recipe Notes

Chia seeds are a good source of omega-3 fatty acids, fiber, antioxidants, iron, and calcium.  Plus, the little bumps in the pudding remind me a bit of eating tapioca pudding.  😉
