Cauliflower Tacos
Ingredients
- 1 head cauliflower chopped
- 1-2 cups beans your choice
- 1 cup corn
- 1 tbsp chili powder or more!
- 2 tsp cumin
- 2 tsp onion powder
- 2 tsp black pepper
- 1 onion diced
- 2-3 button mushrooms diced
- 1 bell pepper (any color) diced
- water or veggie broth
Instructions

Chop one head of cauliflower.

Place chopped cauliflower, beans and corn in a mixing bowl.

Add spices and stir to combine.

In a good sized saucepan or frying pan, brown the onion, mushrooms and peppers in 2 tbsp water/veggie broth until onions are translucent.

Add in the seasoned cauliflower mixture with a little more water/veggie broth. Cover and cook, stirring occasionally for about 8-15 minutes, until cauliflower is done.

Serve with your favorite toppings: Lettuce, tomato, avocado, hummus, tortilla chips, favorite salsa, more peppers, hot sauce, vegan cream cheese as sour cream, there are so many different ways to eat it. Which makes it one of my favorites.
Notes from Plant Based Gal - To make this simple recipe even easier, you can use cauliflower rice, frozen onions and peppers and canned beans (rinsed and drained). The taco filling can be eaten in a tortilla or just on top of lettuce in a big bowl. Perfect for one of your 'Meatless Monday' meals!
