Broccoli Garbanzo Farro Bowl
This is a really easy, tasty, no-recipe lunch I threw together from stuff in my cupboards and fridge.

Ingredients
- 1 cup farro
- 4 cups water
- 4 cups fresh broccoli chopped
- 1 can garbanzo beans, no salt drained and rinsed
- cherry tomatoes
- 2 small oranges peeled and divided into sections
- 1-2 tbsp balsamic vinegar or dressing of your choice
Instructions

Cook farro in boiling water as directed on package 15-20 minutes. If you like the farro softer, add more cooking time.

While farro is cooking prepare the broccoli. Roughly chop the florets and the stalks and place in serving bowls.

Add drained and rinsed garbanzo beans, dividing between the two bowls.

Drain farro and rinse with cold water. Add to the bowls.

Top with tomatoes and orange slices (or whatever veggies and fruit you have on hand).

Sprinkle with balsamic vinegar or a dressing of your choice.
