Beany Farro Salad

Beany Farro Salad

This favorite main dish salad is great by itself or on top of greens or a baked potato. It's filling and tastes even better the next day.

Ingredients

  • 1 ½ cups cooked farro substitute barley
  • 1 can black beans drained & rinsed
  • 1 can garbanzo beans drained & rinsed
  • 1 can pinto beans drained & rinsed
  • 1 can corn drained (substitute frozen, thawed)
  • 1/2 cup red onion chopped
  • 2 stalks celery sliced

Dressing:

  • 2 T balsamic vinegar
  • ¾ -1 cup oil-free BBQ sauce

Instructions

  1. Place drained, rinsed beans in a large bowl.

  2. Add the cooked farro 

  3. Add onion, celery and corn.

  4. Mix in dressing, stir well and marinate in refrigerator for a least one hour. 

Recipe Notes

Serve alone, on top of a salad or in pita bread.
