Beany Farro Salad
This favorite main dish salad is great by itself or on top of greens or a baked potato. It's filling and tastes even better the next day.

Ingredients
- 1 ½ cups cooked farro substitute barley
- 1 can black beans drained & rinsed
- 1 can garbanzo beans drained & rinsed
- 1 can pinto beans drained & rinsed
- 1 can corn drained (substitute frozen, thawed)
- 1/2 cup red onion chopped
- 2 stalks celery sliced
Dressing:
- 2 T balsamic vinegar
- ¾ -1 cup oil-free BBQ sauce
Instructions

Place drained, rinsed beans in a large bowl.

Add the cooked farro

Add onion, celery and corn.

Mix in dressing, stir well and marinate in refrigerator for a least one hour.

Serve alone, on top of a salad or in pita bread.
