BBQ Jackfruit
This BBQ Jackfruit looks and tastes like pulled-pork. It’s a delicious, tender and juicy meat substitute that even meat lovers will enjoy.
Ingredients
- 1 bottle oil-free BBQ sauce or homemade
- 4 (20-oz.) can green jackfruit drained and rinsed
- 2 large onion chopped
- 4-6 cloves garlic minced
Instructions
-
Preheat oven to 400 degrees F.
-
Drain and rinse the jackfruit.
-
Heat large non-stick skillet and add onion, sauteing until softened.
-
Add minced garlic and drained, rinsed jackfruit to skillet and cook on medium heat for 10 minutes. Stir occasionally, breaking up the jackfruit as it softens.
-
Using a potato masher or wooden spoon, mash-up and break apart the jackfruit until it starts looking like pulled-meat.
-
Add 1-2 cups BBQ sauce to the jackfruit mixture and continue cooking another 10 minutes.
-
Place parchment paper or a silicone baking sheet on a cookie sheet. Spread the BBQ jackfruit evenly across the pan. Bake for 15 minutes.
-
Stir and add more BBQ sauce. Bake another 15 minutes until the jackfruit looks just like BBQ pulled-pork!
-
Add a bit more sauce and continue to bake for another 10-15 minutes until nicely browned.
-
Serve on a bun for a tasty BBQ sandwich with more sauce for dipping if desired.
