Aquafaba Dark Chocolate Mousse

This rich dark chocolate mousse is fat-free, gluten-free, and plant-based. And it is made with a magic ingredient!

Ingredients

  • 2/3 cup refrigerated aquafaba (bean water) *see notes below
  • 1-2 tbsp 100% pure maple syrup or agave
  • 1/4 tsp cream of tartar
  • pinch salt
  • 1 cup plant-based dark chocolate chips

Instructions

  1. Melt chocolate in microwave or over boiling water in a double boiler.  

    For microwave:  Heat 60 seconds and stir. Heat another 30 seconds, stir and continue until chocolate chips are completed melted and smooth. 

    Let cool. 

  2. Combine aquafaba, syrup, cream of tartar, and a pinch of salt in very cold mixing bowl. Start beating the mixture slowly, increasing the speed as you go.

  3. The beating will take a good amount of time, somewhere between 5-10 minutes. 

  4. Continue whipping until peaks form. 

  5. Gently fold the cooled, melted chocolate into the whipped aquafaba mixture. 

    Stir very carefully until well blended. But, don’t over-stir & get impatient or you will ‘deflate’ the mousse. (I know this from experience!) 

  6. Pour into individual serving dishes and refrigerate until firm (30-60 minutes).

Recipe Notes

*Aquafaba (bean water) – 1-15 oz can drained will give you just about 2/3 cup of liquid. Refrigerate until really cold.

 


It takes a long time to beat into peaks. The mixing time can be reduced by placing your mixing bowl and beaters in the freezer for 5-10 minutes before mixing.
