Cowboy Caviar

This fresh, colorful and hearty dip with veggies, beans, and avocado is perfect for potluck and family dinners. Serve with tortilla or pita chips.

Ingredients

  • 1 15 oz. can black beans drained and rinsed
  • 1 15 oz. can black-eyed peas drained and rinsed
  • 2 cups corn
  • 1 bell pepper colored of your choice
  • 4 Roma tomatoes diced
  • 1 medium red onion diced
  • 1 stalk celery diced
  • 1/2 cup chopped basil
  • 1/4 cup chopped cilantro
  • 1 avocado diced
  • dressing recipe below

Instructions

  1. Combine all ingredients except for the avocado. Stir well.

  2. Add dressing. Refrigerate for several hours.

  3. Before serving – dice the avocado and stir in gently.

Recipe Notes

Dressing

  • 3 tbsp apple cider vinegar
  • 3 tbsp lemon juice
  • 2-3 tbsp maple syrup
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh oregano (substitute 2 tsp dried)
  • 1/2 tsp salt
  • 1/2 tsp ground pepper

Combine all ingredients and pour over bean/veggie mixture. 


*Note – you can substitute any beans you like.
