Cowboy Caviar
This fresh, colorful and hearty dip with veggies, beans, and avocado is perfect for potluck and family dinners. Serve with tortilla or pita chips.

Ingredients
- 1 15 oz. can black beans drained and rinsed
- 1 15 oz. can black-eyed peas drained and rinsed
- 2 cups corn
- 1 bell pepper colored of your choice
- 4 Roma tomatoes diced
- 1 medium red onion diced
- 1 stalk celery diced
- 1/2 cup chopped basil
- 1/4 cup chopped cilantro
- 1 avocado diced

Instructions

Combine all ingredients except for the avocado. Stir well.

Add dressing. Refrigerate for several hours.

Before serving – dice the avocado and stir in gently.
Recipe Notes
Dressing
- 3 tbsp apple cider vinegar
- 3 tbsp lemon juice
- 2-3 tbsp maple syrup
- 2 cloves garlic, minced
- 1 tbsp chopped fresh oregano (substitute 2 tsp dried)
- 1/2 tsp salt
- 1/2 tsp ground pepper
Combine all ingredients and pour over bean/veggie mixture.
*Note – you can substitute any beans you like.
