Delicious and very filling, this plant-based bowl is easy and satisfying. You can easily substitute other grains, beans, vegetables and greens.
Place grains, broth, onion and garlic powder in saucepan and bring to boil. Turn down heat and simmer 10 minutes. Let sit 5 more minutes.
While grains are simmering, pan-roast yams in a non-stick pan about 10 minutes, until slightly browned and cooked through.
Add corn and black beans to yams and heat through.
Layer fresh spinach, grains and yam mixture in your bowl. Top with optional Strawberry/Pineapple salsa (see link to recipe below).
