Mint Chocolate Chip "Ice Cream"

Minty, chocolately deliciousness! This plant-based ice cream is made from bananas and has no added dairy or sugar. Yummy stuff!

Ingredients

  • 4 frozen bananas
  • 1/3 cup almond milk or other non-dairy milk
  • 1/2 avocado optional, for a creamier texture
  • 6-8 drops peppermint extract
  • 6 drops green food color optional, but fun for St. Patrick's Day
  • 1/2 cup dairy-free chocolate chips more if you'd like 😉

Instructions

  1. Combine frozen bananas, almond milk, , optional avocado, peppermint extract and food coloring in blender jar.  Pulse and blend until smooth.  (Looks kind of like a shamrock, doesn't it!) 

  2. Using a rubber spatula, spoon ice cream into a bowl and fold in the chocolate chips. 

  3. At this point you can eat it like soft-serve or put it in the freezer to harden.  We can never seem to wait. 😜

Recipe Notes

You can make this without the food coloring, but somehow mint chocolate chip ice cream needs to be green - don't you think?!  😜😍💚


If you don't have a powerful blender (like Vitamix), you may want to thaw your bananas slightly for easier blending.
