You don't have to be plant-based to enjoy this yummy and very colorful burrito bowl for lunch or dinner!
Cook brown rice following directions.
Brown sweet potato cubes in non-stick skillet. Turn temperate to low, cover and simmer until just tender, don't over cook. Remove from heat.
Prepare the remaining ingredients and place each in an individual bowl for serving.
In a large bowl, make a bed of lettuce and layer the ingredients you desire for your burrito bowl. Top with sliced avocado and salsa. YUMMY!
