Anytime Potatoes

Made with pre-baked potatoes, these simple, oil-free, fried potatoes are yummy and filling. You can make them for breakfast or for any meal of the day.

Ingredients

  • 2 large potatoes baked
  • 1 large onion sliced
  • several drops Bragg Aminos to taste
  • fresh cracked pepper
  • fresh or bottled salsa for serving

Instructions

  1. Slice a large sweet onion and fry in skillet on medium high heat. As the onion begins to brown (but before it burns), sprinkle in a few tablespoons of water.  This will help to caramelize the onion as it cooks even though you aren't using oil.

  2. Chop pre-baked potatoes into chunks and add to cooked onion in the skillet.

    Sprinkle with a dash or two of Bragg Aminos and fresh cracked pepper.

  3. Stir and cook, adding more water if necessary until heated through.
  4. Serve with fresh salsa.
